Fruity Saturday: Waldorf Salad

Every once in a while it's nice to have a fruit salad. It's a nice accompaniment to breakfast, or an afternoon snack. Rich has been asking for Waldorf Salad. It's not difficult to make, but I don't generally have all the necessary ingredients. Since he was going to the store for groceries, I thought I'll have him pick up what I need and I can make it later in the week. He was very happy!

I mixed up a batch of Waldorf Salad, late yesterday. Wanting to be sure we had plenty to last through the weekend, I multiplied the recipe times 3! I also increased the walnuts! We had some with our breakfast burritos this morning. (Rich made the burritos!)


BTW, we got the "dessert dishes" as a wedding gift 15 years ago and we almost never use them! Another reason for making a fruit salad! I might make Ambroisa next weekend!

According to the recipe, which I found online 12+ years ago at AOL House & Home, it will yield 4 servings and each serving is 89 calories. ENJOY!



2 cups chopped apples
1 1/2 teaspoons fresh lemon juice
1/3 cup chopped celery
1/4 cup raisins
3 tablespoons chopped walnuts 

1/3 cup fat-free vanilla yogurt
1/4 cup frozen reduced-calorie whipped topping, thawed
1/2 teaspoon grated lemon peel
1/8 teaspoon groud nutmeg



To make the salad: Place the apples in a medium bowl. Sprikle with lemon juice, then toss. Add the celery, raisins and walnuts.

To make the dressing: Place the yogurt in a small bowl. Add the whipped topping and gently fold in. Then gently fold in the lemon peel and nutmeg. Add the dressing to the apple mixture. Gently fold in until the apple mixture is coated.

My mom often made both Waldorf Salad and Ambrosia summer Sundays.  (I haven't kept up her all her cooking traditions.)

This is a sweet reminder of her.  Thank you!

PS-the picture is fine for me because I can see it and even "taste" it in my mind.  :)

William~ I made chicken pot pie for dinner and I had 2 helpings! Now it's time for dessert! Must be an all around FOODIE day!
