Our friend Lillian is a fantastic cook.  We can always count on a homemade meal when we visit her house.  Several years ago she served a side dish that made our tummies so happy that I had to ask her to share the recipe!

When planning our holiday meal, we thought this would be a perfect time to have Lillian's Corn Cassarole.  It's tasty, simple to make and it's a recipe that's easy to double if we are having any extra guests!  (If you do decide to double it, I would recommend making 2 pans.)

 


Ingredients:

1 can whole kernel corn (drained)
1 can cream style corn
3 eggs (lightly beaten)
1 stick of butter (melted)
1 cup of sour cream
1 box of Jiffy corn bread mix

 

Instructions

1. Mix together ingredients
2. Bake at 350 degrees in an 8x8 pan for approx. 40-45 minutes or until set.

 

Makes 6 servings. Corn Cassarole

 

The rest of our dinner menu includes Honey Baked Ham, green bean cassarole, Au Gratin postatoes and garlic crescent rolls.  Oh and brownie sundaes for dessert!
