Dinners with Donna: Stuffed Green PeppersStuffed Green Peppers ~ Ready to Eat!

As much as I like food, I'm not much for cooking. This week I decided my husband needs a break. I can't expect him to cook ALL the time and eating out gets expensive. Tonight I made Stuffed Green Peppers. This is one of my favorite dishes.  It takes a bit of work, but it's so worth it in the end. I always make more than we need so that we can get at least 2 meals out of it. (We love leftovers at our house!)

This is NOT my original recipe.  It's a my modified version of the Better Homes and Gardens New Cook Book, page 249.  (I'd be willing to bet that the cookbook is far from new and is in fact probably more than 20 years old!) 

 

 

Ingredients:

~4 Whole Green Bell Peppers
~1 lb. Ground Beef
~1/2 Yellow Onion (you can tell we like onion!)
~1 (15oz.) Can of Diced Tomatoes
~1 cup Instant Rice
~2 Tblspns Worcestershire Sauce
~1 Tsp Dried Basil or Dried Oregano
~2 cups Shredded Cheese (we like Cheddar)
~1 (15oz.) can Tomato Sauce 
~Salt and Black Pepper to taste 

 

Instructions:Green Bell Peppers cut lengthwise

  1. Cut the "caps" off the peppers. Take out the seeds and membranes.  Cut the peppers lengthwise (as seen in the photo).  Immerse the peppers in BOILING water for 3 minutes.  Sprinkle insides with salt.  Invert on paper towels to drain well.
  2. In a skillet, cook meat and onion until meat is brown and oinion is tender.  Drain fat.
  3. In a separate pot, cook Instant Rice.
  4. Add to skillet~diced tomatoes, cooked rice, Worcestershire, salt, black pepper, basil or oregano, 1/4 cup of shredded cheese.  Mix thoroughly.
  5. Fill peppers with meat mixture.  Top each 1/2 pepper with a heaping tablespoon of tomato sauce.  Sprinkle with shredded cheese.
  6. Bake at 375 for 15 minutes.  Let stand 1-2 minutes.  

 

Stuffed Green Peppers ~ Ready for the OvenIn our house, it makes 4 servings. (We each like to have 2 halves. Yes, we are Foodies!)
 

P.S.  If you aren't a fan of green peppers you can use the meat and rice mixture to stuff cabbage!  Yummy!

I haven't figured out a good side dish.  If you have any suggestions, please share them.  Maybe a tossed salad? With or without a side dish, I'm sure this meal will be a hit in your house.
